I mentioned on twitter that I was enjoying my two days off in a row by acting like I am 'Suzy Homemaker'...cooking up a storm! I am normally only off on Sunday's, so I rarely have time to cook anymore. For tonight's dinner I cooked Layered Green Chili Chicken Enchilada's and while they were in the oven, I prepared Stuffed Bell Peppers, to be tossed in the oven tomorrow. I feel so domestic!
